- Live eel -
Because we purchase living eel
that have been mud removed for a week with fresh natural water carefully
from place of origin directly,
It has no odor and smells fresh.
It has full flavor and fat on it.
- Handling -
Experienced chefs trim the eel that purchased as alive
at the restaurant quickly and accurately
with an Edosaki knife.
「Fujiuna」 is a east style of 「Sebiraki」
The outside of the body thickens,
giving it a nice finish.
- Jiyaki / Konashi -
Grill is a Hakata-style 「Jiyaki」.
Place a skewer in one whole fish, without steaming it,
and use a far-flung heat calmly,
to bake the skin crispy.
Add a suitable「Konashi」in the middle,
to finish the flesh chubby.
- Aged sauce -
The clean and fresh taste.
It has a unique savory and
matured deep taste to connect.
